Fruit and vegetables are rich in vitamins, minerals, fibre and water. Some of their ingredients have a genuine influence on how our cells work, particularly so-called “anti-oxidizing” substances which play a major role in preventing cardiovascular illnesses and cancer. The protective effect of fruit and vegetables is linked to the action of these antioxidants that they contain - Vitamin C or carotene, for example - and to the presence of other vitamins or trace elements and their richness in fibre.
